This Mediterranean chickpea bowl is a colorful, nutrient-dense meal that comes together quickly and keeps well for meal prep. Chickpeas are tossed with olive oil and warm spices, then roasted until crispy on the outside and creamy within. They sit on a bed of fluffy quinoa alongside diced cucumbers, juicy cherry tomatoes, pickled red onion, and peppery arugula. A drizzle of creamy lemon-tahini dressing brings all the components together. The bowl is entirely plant-based, naturally high in protein and fiber, and satisfying enough for lunch or dinner. Make a double batch of the chickpeas -- you will want to snack on them.

Ingredients
- 2 (15 oz) cans canned chickpeas, drained and rinsed
- 1 cup quinoa
- 1 English cucumber, diced
- 1 cup cherry tomatoes, halved
- 2 cups arugula
- 1/4 red onion, thinly sliced
- 3 tbsp tahini
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 3/4 tsp salt
Instructions
Preheat oven to 425 F. Pat chickpeas dry, then toss with 1 tablespoon olive oil, smoked paprika, garlic powder, and half the salt. Spread on a parchment-lined baking sheet.
Roast chickpeas for 20-25 minutes, shaking the pan halfway through, until golden and crispy.
While chickpeas roast, cook quinoa according to package directions (typically 1 cup quinoa to 2 cups water, simmered for 15 minutes). Fluff with a fork.
Make the tahini dressing by whisking together tahini, lemon juice, remaining olive oil, remaining salt, and 2-3 tablespoons of warm water until smooth and pourable.
Divide quinoa among four bowls. Top each with arugula, cucumber, cherry tomatoes, red onion, and roasted chickpeas.
Drizzle generously with tahini dressing. Serve immediately or pack for meal prep (store dressing separately).
